Store bought enchilada sauce may be convenient and quick, but this recipe comes together in less than 10 minutes, and often with ingredients already found in your kitchen!
My homemade enchilada sauce is creamy, delicious, and is the PERFECT sauce for my Quick and Easy Chicken Enchiladas recipe. Its so easy to make and trust me, you won't want to go back to store bought sauce after trying it.
Homemade Enchilada Sauce
Here's what you need:
2c chicken broth (or chicken stock)
3-4tbsp chili powder
2-3tbsp tomato paste
2tbsp olive oil
2tbsp flour
1tsp garlic powder
1tsp ground cumin
1/2tsp dried oregano
Salt (to taste)
Instructions
Heat oil over medium heat in skillet. Add flour and stir through. Allow to cook for a couple of minutes to create your roux. Add your seasonings and allow them to cook for a couple of minutes (stir often and make sure they do not burn). Slowly stir in your broth and allow to cook up for a few minutes to thicken. Off heat stir in your tomato paste until well blended (add a bit more chicken broth if needed to reach desired consistency). Salt to taste.
Tips from your Top Goose
You can add additional heat to your liking by using a spicier chili powder or adjusting the amount of chili powder used, but be careful if you choose to increase the chili powder or cumin so it doesn't get too grainy.
Add depth and smokiness to your sauce by adding 1-2tsp of diced canned chipotle chilis in adobo sauce.
