Recipe: Quick and Easy Cheesy Chicken Enchiladas

Chicken Enchiladas

Where are my enchiladas fans at!? I've got a great one for you today. My cheesy chicken enchiladas recipe includes my homemade enchilada sauce and believe me, you're gonna want seconds!


This recipe is quick, easy, and offers you so many different ways to personalize them to your liking! Be sure to check out my Tips from your Top Goose below for suggestions.


Quick and Easy Cheesy Chicken Enchiladas

Here is what you need:

  • 4c chopped chicken

  • 2c Mexican cheese, shredded

  • 2c enchilada sauce (check out my Top Goose Enchilada Sauce recipe)

  • 16 corn tortillas

  • Olive oil

Optional toppings:

  • Salsa

  • Shredded lettuce

  • Chopped tomatoes

  • Red onion slices

  • Avocado slices

  • Sour cream

Instructions

Prepare your sauce. Chop chicken finely and mix 1 cup of your sauce in a bowl with the chicken, set aside. Prepare your tortillas - you can brush them lightly with olive oil and either heat on the stove or in the microwave for 45 seconds. For each tortilla, you want to add about 1/4c of your chicken mixture, sprinkle with cheese, roll them up and place them in your baking dish, seam side down so they stay rolled. Spread remaining sauce on top of your enchiladas and cover with remaining cheese. Bake at 350 for 15m or until edges start to golden. Serve warm.

Chicken Enchiladas
  • Canned enchilada sauce can work in a pinch but TRUST me, you want to use a homemade sauce. My Enchilada Sauce recipe is quick, easy and delicious. Bonus: you can make it ahead of time and store in the fridge for a quick dinner.

  • This recipe is truly a "have it your way" recipe! Do you prefer to use ground beef? Do it! Want to use flour tortillas instead of corn? Go for it!

  • Rotisserie chicken works very well for this recipe, especially if you're in a time crunch.

  • Take your enchiladas to the next level by adding melted queso over the top then topping it off with your favorite salsa! I personally LOVE to make a large flour tortilla and stuff it with the chicken mixture and cheese, then cover it with queso and salsa.
